Photograph: Michael Thomas Jones "I buy fresh mussels from Broadway Market, where I work in east London, at least once a week, but the traditional mariniere sauce is very rich and heavy in dairy," says Felicia. "I've developed a healthier alternative with coconut milk, tamarind and saffron, and use leeks and cavolo nero or purple kale as a sofrito base instead of onions and celery..."
